4 cups baby spinach
1/2 pink lady apple diced
1/2 Danjou pear diced
1/2 cup shredded carrot
1/2 cup shredded purple cabbage
1/2 small red onion sliced
1/2 cup sweet potato croutons
1/3 cup homemade no-oil hummus
4 walnut half broken into small pieces
About 2 tablespoons balsamic vinegar
Place all the vegetable in a large bowl and toss. Dollop the hummus over the salad. Sprinkle walnut pieces. Drizzle with balsamic vinegar.
